Day 255…pumpkins
The first year I grew sugar pumpkins was a rewarding experience. I had no idea what I was doing, and somehow I grew 9 beautiful pumpkins. But I only ended up with 3. My little neighbours across the street wanted 4 of the pumpkins. Two of my other neighbours who had been cheering me on in the process each received one (for believing in me) and that left me with 3 pumpkins.
I had always planned on baking with them. But I had no idea what, beyond pumpkin pie. I decided to google “best pumpkin muffin recipe” and immediately found this one: Best Ever Pumpkin Muffins. While I may not have read the long explanation about why it was a good recipe (or maybe I did) I decided to do a direct substitution of gluten free flour and give it a shot. The result? Honestly, the best ever pumpkin muffins. The title was completely accurate.
The pumpkins have started developing in my garden and the excitement has begun. But everyday I manage my expectations as the deer take interest in the blooms. Still, I hope that this fall will involve baking pumpkins from my garden for pumpkin pie puree, so I can make the best ever muffins.
